Gluten is a lipoprotein found in cereals, as wheat, spelt, rye, oriental wheat

LACTOSE INTOLERANCE, or lactose malabsorption, is a syndrome
characterized by gastroenteric indispositions that arise after ingestion of
food including this sugar, caused by production deficit of lactase enzyme,
which splits lactose into glucose and galactose, into the intestinal cells of
duodenum. Glucose and galactose are easily absorbed into the intestine. Lactase is an enzyme which catalyses
lactose degradation and is produced in the first stage of life in mammals. It
is not produced during adult life; some adults can synthesize this enzyme
longest. About 30% of humans has the capacity to digest lactose during adult
intolerance shows the following symptoms: flatulence, meteorism, abdominal cramps,
diarrhoea and weight loss. In case of intestinal deformity, symptoms can be
misleading: beyond flatulence, meteorism and abdominal cramps, there can be
diarrhoea and constipation alternated with big growth of belly dimension.Food
therapy includes reduction or total exclusion of food containing lactose (milk
